Try this delicious and easy waffles recipe which will make your house smell like autumn… INGREDIENTS: (For 10 to 12 waffles) • 100 ml (90g) vegetable oil (a little less than ½ cup, or 6 + ½ T) • 100 g unpacked light-brown sugar ( ¾ cup minus 1 T, or 11 T) • 220 ml pure pumpkin puree (just under 1 cup) • 200 ml soy milk (around ¾ cup + 2 T) • 1 T vanilla extract • 1 packet vanilla sugar • 320g all-purpose flour (2 ½ cup + 1 T) • ½ T baking powder • 1 pinch of salt • ½ T cinnamon • ¼ t pumpkin pie spice STEPS: • In a large mixing bowl, mix the sugars, the oil, pumpkin puree, milk & vanilla • In another mixing bowl, mix all the other dry ingredients • Combine the dry and the wet ingredients: sift the dry over the wet and mix gently with a whisk to avoid making lumps. Do not whisk too vigorously! You don’t want to activate the gluten by over-mixing. • Cover and let the batter rest for 30 minutes • Then, preheat your waffle iron • The batter might seem a little thick: don’t worry ! Lightly oil the waffle iron, then spread a ladleful of batter on the slabs and cook according to your iron instructions • Let the waffles cool on a cooling rack • Repeat until you have no batter left Eat right away with your favorite toppings! The waffles will be crispy on the outside and deliciously soft on the inside. They will still be good the next day, especially if you toast them before.
