Dreams really do come true y’all. Guess what...I WON my first cake competition. WOW. There was a twist though. The judges wanted a healthier dessert. So, I made a Coconut Layer Cake with cream cheese/Greek yogurt, agave frosting. This cake is filled with coconut in EVERY way. In this video I will show you how I made the cake batter, frosting, and how I assembled the cake in coconut. I hope you enjoyed this video and found it FUN and helpful. Love, Cake Legit Coconut Cake Recipe: 1/3 cup of Greek yogurt 4 Tbsp of unsalted butter (melted) 1/2 cup of stevia brown sugar 3 whole eggs 2 egg whites 2 tsp of coconut extract 1 tsp of vanilla extract 1 cup of coconut milk 1 tsp of baking powder 2 and 1/2 cups of All Purpose Flour Bake at 350 degrees for 20-25 minutes. Frosting: 2 (8oz. Cream cheese) room temperature 1/3 cup of Greek plain yogurt 2 tsp coconut extract 1 tsp vanilla extract 1/3 cup of agave syrup Topping: Sweetened Shredded Coconut (about 3-4 cups)
