Vegetable-Stuffed Cabbage Rolls Recipe Ingredients For the Cabbage Rolls: 3 medium-sized cabbages (20-25 leaves) Water (for boiling) For the Filling: 1 tbsp oil 1 medium onion, finely chopped 3 to 4 cloves garlic, minced 2 green chilies, chopped (adjust to taste) 1 cup mushrooms, finely chopped 1/4 cup carrots 1/2 cup bell peppers 1 cup rice vermicelli (or cooked rice) Salt and pepper to taste 150 g paneer, crumbled (or tofu/soya granules as an alternative) 4 tbsp tomato sauce 1 tbsp oregano 1 tsp Red chilli flakes 1 tsp red chilli powder 1 tsp hot sauce For the Sauce: 1+ 1/2 cup tomatoes, pureed 1 tbsp oil 2 cloves garlic 1 small onion Salt and pepper to taste ¼ cup processed cheese (or any good melting cheese) Salt to taste 1/2 tsp red chilli flakes 1 tsp red chilli powder Instructions Prepare the Cabbage Leaves: Remove the core of the cabbage to easily separate the leaves. Boil the cabbage leaves in water for 10 minutes or until soft and tender. Drain, let them cool, and set aside. Prepare the Filling: Heat oil in a pan and sauté onion, garlic, and chilies for a minute. Add mushrooms and cook on high flame until they soften. Stir in carrots and bell peppers. Season with salt and pepper. Add rice vermicelli (or cooked rice) and mix well. Finally, add crumbled paneer (or tofu/soya granules) and add all sauces and seasoning , combine. Prepare the Sauce: In a pan, heat oil and sauté onion and garlic , now add red chilli flakes and saute for a minute then add the tomato puree. Cook for 12-15 minutes until the sauce thickens. Season with salt and red chilli powder Add cheese and cook until it's melts completely. If you prefer a smooth sauce, blend it until smooth. Assemble the Cabbage Rolls: Lay a cabbage leaf flat and place a portion of the filling in the center. Slightly overlap a second leaf. Roll tightly to prevent it from opening while cooking. Cook the Rolls: Heat a pan with a little oil and carefully place the rolls. Cover and cook on medium-low heat for 5-7 minutes, flipping carefully. Optionally, steam the rolls instead of pan-frying. Serve: Pour the prepared tomato sauce over the rolls. Or optionally Sprinkle with cheese and let it melt. Enjoy hot! #cooking #cabbage #dinnerrecipe #healthy
