Chop well & set aside. -In a frying pan add gram flour and dry roast on low flame until fragrant. Set aside. -In a wok add ghee (reserve 2 tbs for later use) and let it melt. -Add dry nuts, grated coconut, mix well and cook for 2 minutes. -Add roasted gram flour and mix until well combined. -Add sugar and mix well. -Add milk and mix well. -Add cardamom powder, mix well and cook on low flame until sugar is dissolved (approx. 8-10 minutes). Mix continuously. -Add reserved ghee, mix well and cook until it leaves the sides of the pot (approx. 10-12 minutes). Mix continuously. -Grease tray with ghee. Add prepared mixture and spread evenly. -Decorate with cashew nuts and cut into pieces. -Let it set for 1-2 hours & then serve ! Recipe in Urdu: Ajza: -Fresh coconut 1 Cup -Baisan (Gram flour) sifted 1 Cup -Ghee 1 Cup -Dry nuts roughly chopped 1 Cup -Cheeni (Sugar) 2 Cups -Doodh (Milk) 1 Cup -Elaichi powder (Cardamom powder) 1 tsp Directions: -Chopper mein fresh coconut ko ache tarha chop ker lein & side per rakh dein. -Frying pan mein baisan daal dein aur khushbu anay tak halki ancch per dry roast ker lein. -Karhai mein ghee (reserve 2 tbs for later use) dal ker melt ker lein. -Dry nuts aur grated coconut daal ker ache tarha mix karein aur 2 minutes tak pakayen. -Bhuna hua baisan daal ker ache tarha mix ker lein. -Cheeni daal ker ache tarha mix karein. -Doodh shamil karein aur ache tarha mix ker lein. -Elaichi powder daal ker ache tarha mix karein aur halki ancch per cheeni ghul janay tak pakayen (approx. 8-10 minutes). Musalsal chamcha chalatay rahen. -Reserved ghee daal ker ache tarha mix karein aur pot ki sides chornay tak paka lein (approx. 10-12 minutes). Musalsal mix kertay rahein. -Tray ko ghee se chikna karein aur tayyar mixture daal ker evenly phela lein. -Kaju se decorate karein aur pieces mein cut ker lein. -1-2 hours set hunay k liye rakh dein & serve karein !
