Kuy Teav is to Cambodia as pho is to Vietnam. The classic version is often called 'kuy teav Phnom Penh'. It's eaten at breakfast, lunch, dinner, and as a snack. Rice noodles with pork or beef in a broth... It sounds pretty simple, but there's a lot going on in a Cambodian noodle restaurant. I'm talking to Harry, the owner and operator of Chheang Heng Restaurant. His parents started selling kouy teav 30 years ago, and he's now taken over the business. Having grown up in a noodle shop, he knows the ins-and-outs. We'll go over the popular dishes in both English and Khmer. We'll have a look in the kitchen. I'll try a bunch of noodle shop classics, like the Cambodian version of siu mai (a giant meatball in broth eaten with a fried doughstick!).
