Cheese and Onion Pie with Gluten Free Pastry

In the last 10 years or so the demand for gluten-free goods has gone from the tiny number of people who have coeliac disease and seriously cannot eat gluten, to a larger number of people who think gluten is bad for them. This is my first attempt at making anything gluten-free, so it's a bit of a challenge. I made my gluten-free pastry with xanthan gum and I think it turned out OK. Its texture is noticeably different to normal pastry - it's a bit more crumbly than flaky and the lack of gluten makes it harder for the flour to hold together. I used Dove Farms white gluten-free flour which is a blend of 5 or 6 naturally gluten-free grains.
