VARENIKI KARTOFILOV BORAKI Potato Dumplings . INGREDIENTS... DOUGH 2 1/2 c All Purpose Flour sifted / + 1 c or more for kneading 1 to 2 c Hot Water / or as much as needed to make a soft-none sticky dough. 1 tsp. Salt FILLING 3 med/large Potatoes/ cooked and mashed 2 large Onions / finely chopped 2 Bay Leaves 2 to 4 large cloves of Garlic/ smashed & chopped 2 to 3 Tb sp. Parsley / finely chopped 1 tsp. heaping Sour Cream 1 Tbsp. Butter / for mashed Potatoes 1/2 stick Butter / for frying onions. 1/2 c Sunflower Oil /OPTIONAL!!! You can use butter again, instead of oil for frying onions. Salt / to taste Blk. Pepper / to taste DIRECTIONS... 1) Here is where you will decide for yourself if you like to use all butter, which is recommended, or mic butter and oil instead as I have given the measurements above for healthier version. Begin by sauteing your onion and garlic, then set aside. 2) Place your potatoes in salty water with 2 Bay Leaves, until potatoes are softened. Do not overcook your potatoes. 3) While the potatoes are cooking begin to prepare your dough. Add salt to the flour and whisk until blended. Begin slowly adding the hot boiling water and stirring with a wooden spoon or a fork to combine together. Once you see that you no longer can mix by hand,turn over on a well floured surface and begin to knead carefully without burning your hands. Continue adding the rest of the flour while kneading, until the dough comes together. If for any reason, you use up the extra cup of flour and you notice that the dough is still sticky, do not be afraid to add a little more flour. Continue kneading for 10 to 15 minutes, until you have a none sticky soft dough. Place dough ball back in your floured bowl, and cover with a lid to keep it warm for about 20 minutes. Dough needs to rest before rolling out. 4) Now time for you to roll out the dough. Cut the dough ball in half. Place 1/2 back into your bowl and cover again. Shape the other half into a ball and roll out thinly. The thickness of the dough, should be the thickness of a tortilla. 5) Now time to cut out. As you can see I used a clean 😉 tuna can lol as a cookie cutter, because it's a perfect size for this recipe. You also can choose the size of the dumplings👌 if you like them smaller. You can use anything you desire to cut the disks from cookie cutters, to can's, to glasses. 6) Place 1 teaspoon of the potato filling, more or less depending on the size of your disks, and pinch the edges together. Remember to dunk your fingers into the flour to make it easier for the dough to stick together while pinching. Next follow the pictures bellow on how to shape them. 7) Put a large pot of water with a little bit of salt and oil and bring it to a boil. While boiling drop your Dumplings in. At 1st you will notice that they will sink to the bottom of your pot. Gradually as they cook they will start to float on top of the water. Continue turning them over and over while cooking them. Cook at least 5 to 7 minutes. Now again, depending on how thin your dough is that you rolled out, will determine the cooking time. When you think that it might be ready and cooked, take one out and give it the taste test 😉 Remember these dumplings are best when freshly taken out from the boiling water and served with sauteed onions and garlic topping that we prepared. And this is how simple this meal is 😉 and yet so so delicious when eaten right away.
