Recipe 1: Cottage Cheese Berry Delight Ingredients: 1 cup cottage cheese 1/4 cup blackberries 1/4 cup strawberries 1 tablespoon unsweetened shredded coconut 1 tablespoon chopped nuts (almonds, walnuts, or pecans) 1 teaspoon vanilla extract 1 tablespoon erythritol Instructions: In a bowl, mix the cottage cheese, vanilla extract, and sweetener. Gently fold in the mixed berries. Sprinkle unsweetened shredded coconut and chopped nuts on top. Serve immediately or chill in the refrigerator for 10-15 minutes before serving.
