Get yourself a Pit Barrel Cooker: https://www.pitbarrelcooker.com/ 🔥HOT N FAST WINGS RECIPE Prep: first rinse your chicken wings, then pat dry with a paper towel. Spray a light coating of cooking spray on both sides of each wing, then coat with your favorite dry rub - just be sure to use a rub or seasoning that has NO SUGAR.. The high heat were using for today's cook will BURN the sugar, ruining your wings! Now light your Pit Barrel according to the instructions provided by Pit Barrel Cooker Co. Once the charcoal is ready, dump it in the Pit Barrel, add a chunk or two of your favorite smoking wood, and place the wings on the grate in the Pit Barrel. Put the lid on being sure to leave it cracked a bit in order to get high heat going. Smoke the wings at high heat for approx 20 minutes. After the first 15-20 minutes, check the wings. Flip them over, and put the lid on, this time closing it all the way. Let smoke for another 20 minutes. After the second round, check the wings. Your looking for a nice golden brown to dark brown color, and to see if the skin is crisping up. You can also check the temps of the wings to make sure they have cooked through.
