Get ready for a seriously adult treat! Our Rum Raisin Ice Cream is not for the faint-hearted. We lots of dark rum along with gelatine to ensure that this ice cream takes in as much rum as possible. While gelatine may not be commonly used in ice cream, it is the secret ingredient that allows this dessert to churn to its fullest potential without being compromised by the high rum content. The raisins soak overnight in rum, becoming little pockets of flavour that burst with every bite. -------- Equipment used in the recipe: ✓ ice cream maker ✓ kitchen scale ✓ blender -------- Ingredients: ⚖ batch for 1.5-litre to 2-litre ice cream maker ------------------------------ for the ice cream mixture • 180 g sugar, if using only regular sugar or only Demerara, add it at [01:28] I use a combination of: 80 g Dark Muscovado sugar [01:04] 100 g Demerara sugar [01:28] • 390 g whole milk [01:30] • 500 g heavy cream, 35-36% fat 100 g to add with the milk [01:32] 400 g to combine with the custard [02:53] • 2 gelatine sheets or 2 teaspoons of gelatine granules can be used. I use Platinum gelatine with a bloom strength of 235-265, which is the standard gelatine found in the grocery store's baking aisle. [01:43] • 100 g egg yolks (3.5 oz; 5-6 egg yolks, from large eggs) [02:00] • 70 g dark rum [04:06] ------------------------- for soaking the rum and raisins: • 100 g golden raisins [04:23] • 120 g dark rum [04:26] to add strained in the churning ice cream: [05:20] ---------------------------- Notes: ✅ do not play around with the ingredients and quantities; everything is there for a reason.
