I absolutely love this vegan toffee recipe! It makes a great gift for people if you want to do something homemade. My mom used to love english toffee candies growing up and I always have too. I have a lot of good memories associated with toffee. I'm so happy to be eating it again since I was able to make it vegan and to share this recipe with you guys. If you need it to be nut free simply don't add any nuts and it's still delicious. You can also make this without chocolate and add chopped nuts in the toffee mix before adding to the cookie sheet for a different style of toffee. This vegan toffee tastes exactly like the real thing and your family and friends will love it! Here's the vegan recipe! INGREDIENTS 1/2 C. Chopped Almonds (Maybe up to 3/4 C. and optional) 1 Heaping C. of vegan Semi-Sweet Chocolate Chips 1 C. Sugar 1 C. Vegan Butter (I used soy free) 1/4 tsp. Salt 3 Tbs. Water 1 Tbs. Corn Syrup Note: You'll also need a candy thermometer to measure exact temperatures. DIRECTIONS Melt the vegan butter, sugar, salt, corn syrup, and water in a sauce pan over medium heat. Allow the toffee to come to a boil and put in the thermometer. Stirring constantly watch the temperature. You can very slowly adjust the temperature so it will rise to this level. Once it's at about 280 degrees watch it very carefully so it doesn't burn. Once it's reached 290 degrees remove from the heat and remove the thermometer and stir rigorously to mix toffee well. Pour into a aluminum foil lined cookie sheet and let sit for about 3-5 minutes. Sprinkle vegan chocolate chips on top evenly and wait for them to melt. You can pop it in a hot oven just long enough to melt the chocolate chips enough to be spreadable which should take about a minute. Spread chocolate evenly covering all the toffee. Sprinkle the almonds evenly over the chocolate and lightly press into the chocolate. Refrigerate until solid. I set it in the refrigerator for about 20 minutes. Enjoy! CONNECT WITH ME!
