Cash App https://cash.app/$QuaintHousewife Connect with me on: TikTok / quainthousewife Instagram / thequainthousewife Facebook / the-quaint-housewife-920561591359697 RECIPES & MENU FOR WEEK 2 T = Tablespoon; t = teaspoon BREAKFAST 1 Berry Muffins Makes 24 Muffins Ingredients 3 1/2 cups spelt flour (or whole wheat flour) 2 cups rolled oats 1/4 cup sunflower seeds (or other nuts/seeds) 4 t baking powder 1 t baking soda 1 t salt 4 large eggs 1 cup Greek yogurt (or sour cream or cottage cheese) 1 cup cooking oil 1 cup honey 2 t vanilla extract 1 cup fresh or frozen cranberries (or any berries) 1 cup fresh or frozen blueberries (or any berries) Directions Preheat oven to 350 F. Defrost any frozen berries you'll be using by leaving them in the sink to thaw. Spray muffin tin with cooking spray. Mix together dry ingredients. In a separate, large bowl beat the eggs. Add oil, yogurt, honey, and vanilla. Add the dry ingredients to the wet ingredients and combine. Add in seeds and berries and remix. Fill muffin tins. Bake for 20 minutes, or until a knife inserted in the center comes out clean. BREAKFAST 2 Fried Chili Potatoes & Veggie Breakfast Burrito Veggie Breakfast Burrito Add desired vegetables to one side of a tortilla. Add 2 T sour cream and a sprinkle of chives to the other side. Fold over and serve. Fried Chili Potatoes Makes 4 Servings Ingredients 4 large potatoes, rinsed and dried of all moisture on the skin 1/3 cup cooking oil 3/4 t salt 1/4 t black pepper 1 t chili powder (or more) Directions: Slice potatoes into 1/2 circles. Add oil to a pan over medium heat. Add potatoes to the pan once a drop of water in the pan sizzles. Arrange potatoes in one layer. Slightly lower heat. Cook with covered lid 5 to 7 minutes. Flip potatoes to the other side and cook 5 to 7 minutes more. Potatoes are done when they have signs of crispiness on each side. Drain potatoes on towel. Sprinkle evenly with salt, pepper, & chili powder. LUNCH 1 Creamy Chicken Soup Makes 4 Servings Ingredients 2 cups dry rotini 1 lb raw boneless skinless chicken breast, cubed 1 T cooking oil 3 carrots chopped carrots 3/4 cup corn 4 t chicken buillion powder 4 cups water 1 T dried parsley 1/4 cup butter 1/4 cup + 2 T white flour 1 can evaporated milk + 1 can water 1/3 cup heavy cream Black pepper Dill weed Instructions Cook rotini separately, according to package. In a large pan, heat oil over medium heat. Saute carrot and corn until tender. Add 4 cups water, bullion, parsley, and cubed chicken. Bring to a boil. Reduce heat to medium, cover with lid, allowing chicken to thoroughly cook, for 10 minutes. Melt butter in a pan over medium heat, add flour and whisk for 1 minute. Whisk in evaporated milk and can of water (pre-mixed) until any lumps are smoothed out. Whisk in cream. Boil for 1 minute and stir. Pour sauce and noodles into soup mixture. Add black pepper and dill weed to taste, and serve. Lunch 2 Open-Face PB Sandwich With Raisins & Cinnamon, & a Carrot on the Side To make sandwiches, spread PB over two slices of bread, top each slice with 1 to 2 T raisins. Sprinkle with cinnamon. Serve open-faced with a carrot on the side. Dinner 1 Spam, Cabbage & Rice Dinner Makes 8 Servings Ingredients 2 T oil 2 1/2 cups dry long grain white rice 1 head cabbage, chopped 1 can Spam or Treet, cubed 4 t paprika 4 t garlic powder 1 t cumin 4 t oregano 1.5 t black pepper 2 t turmeric 1.5 t salt Directions Cook rice according to package directions. Place oil in an over-sized frying pan and saute cabbage. Add cubed meat. Add herbs and spices to pan except for salt, and mix well. When cabbage is soft, add salt and rice to pan. Mix well and serve. Dinner 2 Homemade Pizza With Spinach, Red Onion, & Anchovies Customize the pizza dough below with your favorite cheese and toppings. Whole Wheat Pizza Dough Makes Dough for two 12" Pizza Crusts of Medium Thickness Ingredients 5 to 6 cups whole wheat flour 4.5 t fast-rise yeast 1.5 t salt 2 cups warm water (120 to 130 degrees F) 4 T oil 1/4 cup corn meal Butter for pizza pan Directions Preheat oven to 425. Mix 4 cups flour, dry yeast, and salt in a bowl. Mix in warm water and oil. Mix in 1 to 2 cups of remaining flour, enough to make a soft dough. Knead 5 minutes. Cover dough with a warm, damp towel for 20 minutes. Spread 2 pie pans with butter and sprinkle with corn meal. Roll out dough and shape to pan sizes. Fill pans with rolled out dough. Pierce entire crust with fork. Top dough with cheese, sauce, and toppings, and bake for 18 minutes.
