Whether you're craving simplicity or something indulgent, this episode has something for everyone. 📅 Aired: 26 May 2025 👨🍳 Host: Chef Mehboob Khan 📺 Show: Mehboob’s Kitchen 📍 Channel: Masala TV 👉 Subscribe for more desi favorites and kitchen classics: https://bit.ly/MasalaTV Chana Chawal Ingredients: Boiled Kabuli Chickpeas 500 grams Oil 1/3 cup Garlic (chopped) 1 tablespoon Ginger (chopped) 1 tablespoon Onion (sliced) 1 large Chili powder 2 tablespoons Turmeric powder 1 tablespoon Salt 1 tablespoon Nigella seeds 1 tablespoon Dried fenugreek leaves 1 tablespoon Green chilies (sliced) 6 Baking soda 1 tablespoon Boiled rice ½ kg Onions (sliced) 2 Tomatoes (sliced) 2 Pickle 1 cup Method: 1. Heat oil in a pan and fry the sliced onion until golden. 2. Add chopped garlic and ginger, and fry. 3. Add nigella seeds and sauté for a few seconds. 4. Add chickpeas, baking soda, chili powder, turmeric, and salt along with 1 liter of water. Cook for about 20 minutes. 5. Add green chilies and cook for another minute. 6. Spread the boiled rice on a serving plate, pour the chickpeas over the rice, top with sliced onions and tomatoes, and serve with pickle. Shahi Khichdi Ingredients: Basmati rice ½ kg Green pigeon peas (boiled) 250 grams Chicken stock 1 liter Whole garam masala 2 tablespoons Onion (sliced) 1 large Fried onion 1 large Garlic 1 tablespoon Ginger 2 tablespoons Salt 1 tablespoon Boiled eggs 6 Mixed pickle – 1 cup Papad 6 pieces Oil for frying Boiled potatoes (wedges) 3 Method: 1. Deep-fry the potato wedges and set them aside. 2. In a pan, heat ¼ cup oil and fry the sliced onion and garlic until golden. 3. Add whole garam masala and fry briefly. 4. Add the rice, boiled pigeon peas, and chicken stock. Cook until the rice is tender and comes to a boil. 5. Transfer the khichdi to a serving plate, top with fried potatoes, boiled eggs, and fried onions. 6.
