Khara Bhath #southindian #breakfast #upma Ingredients 1. Roasted Sooji / Upma Rava - 1 1/2 cups (375 gms) 2. Carrots - 2 medium sized 3. Onion - 1 4. Tomato - 1 5. Green chillies - 2-3 6. Frozen Green peas - 1/4 cup 7. Ginger - 1 inch (grated or finely chopped) 8. Sambar powder - 1 1/2 tsp 9. Turmeric powder - 1/4 tsp 10. Mustard seeds - 1 tsp 11. Cumin seeds - 1 tsp 12. Urad dal - 1 tsp 13. Chana dal - 1 tsp 14. Curry leaves - 1 sprig 15. Coriander leaves - 1/4 cup 16. Oil / Ghee - 2 tbsp 17. Asafoetida - 1/4 tsp 18. Salt 19. Sugar - 2 tsp (optional) 20. Water - 3 cups (a little more if needed) Procedure Heat the oil/ghee in a pan and add mustard seeds. After they splutter, add cumin seeds, urad dal and chana dal. Once the lentils turn dark orange, add curry leaves and asafoetida. Then add ginger and sauté for a few seconds. Add the chopped onion and keep sautéing till it gets translucent. Then add the green chillies, green beans, carrots and green peas. Add some salt to season the veggies. Once the carrots and peas have gotten rid of the raw smell, add the tomatoes. Cook the tomatoes completely and then add water. Add the sambar powder and turmeric powder and get the water to a boil. Add some salt and immediately add the roasted rava (constantly stirring) and close the pan with a lid. After about 5 minutes, while the dish is still hot, add sugar and mix well. Finally add chopped coriander leaves and serve hot. Note : A little sugar gives a hint of sweetness which I really like in khara bhath. You can omit it if you want. Enjoy the upma with a hot cup of filter coffee
