Zest the citrus fruit directly into the bowl, Sqeeze the juice, taking care to discard the pips. Mix everything well and cover with a cloth, leave overnight or 8 hours to allow the flavours to develop. Day 2, Preheat oven to 120°C (225°F). Give the mixture a mix, cover loosely with some foil or parchment paper and bake in the low oven for 3 hours. Allow mixture to cool, almost completely, for around an hour. Sterilise 8 regular-sized jam jars. Add the Brandy to the mincemeat and mix again. You're ready to load up the jars. Using 2 spoons add to the jars, try to make sure the mixture going right down not leaving gaps. Once filled, make sure the edge of the jar is clean and sealed at once with the sterilised lids. Top tip: If you're planning on storing a long time, add a waxed disc to the top before sealing the lid.
