Raising the first logs! Join me again as I step back in time and use the tools and techniques of the nineteenth century to cut the dovetail corners for a small cabin that I am building. The process is not rocket science but it does require attention to details. This video is a little longer than usual because it contains a little something extra. In it I cook breakfast of smoked ham and Johnny Cakes for me and the little dog using only a campfire and some very basic ingredients. Johnny Cakes are known by a variety of names around the country. You might know them as Journey Cakes, Hoe Cakes, or Traveling bread or any one of a number of names. Basically, they are a form of fried corn bread. They can be as simple as corn meal and water or they can be made of corn meal, wheat flour, sugar, salt, and even a little yeast if you happen to have it. My version is 2/3 corn meal 1/3 wheat flour and warm water. I cooked mine in the grease from the ham but you can use what you have. And they are delicious. The Indians, from whom the receipt comes, used only corn meal and water and cooked them on a hot rock. They are excellent when warm but they will last for days. They were carried by soldiers and hunters alike. They received the name hoe cakes from the slaves and poor whites of the Old South who often had to work the fields all day and did not have the opportunity or the means to have a full breakfast. They would simply slip the head of the hoe off of the shaft and put it over the fire and use it as a makeshift skillet. Whatever you call them they are very nutritious and will sustain a person indefinitely. I hope you enjoy the video.
