Pinch of cooking soda Salt as per taste Coriander leaves- finely chopped Curry leaves- finely chopped SEASONING: 1 spoon mustard seeds 1 tbsp urad dal 1 tbsp channa dal 2 red chilli Add 1 tbsp oil in a kadai. Add seasoning ingredeitns one by one- mustard seeds, urad dal, channa dal, red chilli. Add the cashew and roast them all together. Add chopped curry leaves and stir. Add 1 cup rava and saute Take off the flame and pour the mix into a bowl. Let it cool. Add salt, coriander leaves and a pinch of cooking soda and mix. Then add a cup of curd and mix it all into a smooth batter Let it rest for 5-10 minutes. If it gets thick, you can add more curd to this mixture. Oil and idli plate and add grated carrots at its base. (Carrot is optional) Pour the idli batter on it and put it in a pressure cooker without the whistle. Steam for 7-8 minutes. Serve hot with ghee and chutney. PEANUT CHUTNEY- INGREDIENTS: 1. 1/2 cup roasted peanuts 2. 2 green chillies 3. 2 red chillies 4. 3-4 garlic 5. 1/2 tsp mustard 6. 1 tsp urad dal Salt to taste Method Take some oil in a Kadai. Add mustard seeds, urad dal, green chillies and red chillies. Keep the green and red chillies aside. Take a mixie jar and add roasted peanuts, roasted green chillies and red chillies, garlic and salt. Add enough water and grind to a smooth paste. Add the seasoning of mustard and urad dal.
