These homemade oatmeal fudge bars have soft, chewy oatmeal cookie layers with a creamy chocolate fudge filling in the middle. The combination of hearty oats and rich chocolate makes these bars a perfect dessert or treat for gatherings, lunchboxes, or an afternoon coffee break. If you enjoy oatmeal cookie bars, chocolate fudge desserts, or easy homemade baking recipes, these oatmeal fudge bars are simple to make and full of flavor. Ingredients Oatmeal Bar Layer ¾ cup unsalted butter, room temperature ¾ cup granulated sugar ¾ cup brown sugar 2 large eggs 2 teaspoons vanilla extract 2 ½ cups quick oats 2 ½ cups flour (I use 1 cup whole wheat flour and 1 ½ cups unbleached white flour) ½ teaspoon salt ½ teaspoon baking soda Fudge Layer 2 cups semi-sweet chocolate chips (or milk chocolate chips) 1 (14 oz) can sweetened condensed milk (about 1 ¼ cups) 2 tablespoons butter 1 teaspoon vanilla extract Instructions Preheat oven to 350°F (175°C). Spray a 9×13 inch pan with pan spray and optionally line with parchment paper. Cream butter and both sugars until light and fluffy (about 3–4 minutes). Add eggs and vanilla and mix until combined. In a separate bowl whisk together oats, flour, salt, and baking soda. Add dry ingredients to wet ingredients and mix until just combined. Press 2/3 of the dough into the bottom of the prepared pan. For the fudge layer, combine sweetened condensed milk, chocolate chips, butter, and vanilla in a bowl. Heat in the microwave in short intervals, stirring until melted and smooth. Pour the fudge over the oatmeal layer. Crumble the remaining dough over the top. Bake for 25–30 minutes until the edges are just lightly browned. Let cool completely before cutting. Store in an airtight container in the refrigerator for up to a week.
