A soft and chewy classic vanilla cookie, it comes together in less than 15 minutes and is a versatile base cookie recipe. Ingredients: 200g unsalted butter at room temperature 150g sugar 1 tsp vanilla extract 1 egg at room temperature 230 all-purpose flour, sifted ½ tsp salt ½ tsp baking powder sugar for rolling Instructions: Preheat the oven to 350°f / 180°c. Line the baking sheet with parchment paper (you may have to bake these in several batches depending on your tray size. (this cookie can also be made with an electric hand or stand mixer) In the bowl, cream the butter, and sugar until light and fluffy. Add the egg and vanilla and mix to combine. Sift the flour, salt, and baking powder in a small bowl. Add to the mixture, and mix until just combined. Place some sugar in a small bowl to roll the dough into it. Using a 2 Tbsp cookie scoop, scoop the dough (about 45g each). Roll each dough ball between your hands to form a ball, then roll in the sugar and place on the baking sheet. Leave about 2 inches of space between each ball to ensure that they will not join together. Bake the cookies for 11-14 minutes or until puffy and set around the edges. Remove from the oven and cool on the pan for 10 minutes - the cookies will deflate as they cool. Transfer to a wire rack and allow to cool completely. Store leftover cookies in an airtight container at room temperature.
