Pastry Chef Katie Sansone of Tom's Thumb Fresh Market shares the recipe for her Do-Si-Do Apple Pie. The pie uses the Girl Scout Do-Si-Do cookie and is part of the Cookie Dessert Challenge in Phoenix, Arizona during February. The challenge has 13 chefs creating desserts with Girl Scout Cookies to raise funds for the Arizona Girl Scouts. Here Chef Katie demonstrates the strudel topping on the Apple Pies. Pies come in an individual serving size for $2.50 and a sharable dinner portion for $5. Tom's Thumb is located at 94th St. & Bell Road in North Scottsdale. Katie's Do-Si-Do Apple Pie Strudel: 1 cup quick cooking oats 1 cup flour 1 cup brown sugar ¼ tsp baking powder ¼ tsp baking soda ¼ tsp nutmeg ¼ tsp salt pinch ground clove 1 TB cinnamon ½ cup melted butter 10 do-si-do cookies Put all ingredients except for melted butter into a mixer. On the lowest speed, mix until cookies have broken down and are not larger than a pea. Slowly stream in melted butter and leave at room temperature until ready to use. Strudel may be made ahead stored in the refrigerator until needed.
