Please like and subscribe for more great videos :) Find us on Facebook at: / piggywolfcuppycakes Music by Lisa Richards - Bloom Lemon Cheesecake (makes 4) **** Recipe Ingredients Lemon Curd 1 egg ¼ cup lemon juice 1/3 cup caster sugar Biscuit crumble 25g butter 150g Arnott's Granita biscuits (more or less, depending on how much biscuit you prefer) Cream Cheese 250g cream cheese 150ml thickened cream 2 tbs icing sugar 1 tsp lemon rind Chocolate to garnish 1. Lightly beat egg. Strain lemon juice through a sieve, add sugar and stir. Place over medium-low heat and continue to stir until mixture is thick. Remove from heat and strain through a fine sieve into a clean bowl. Cover with plastic and place in the freezer to cool. 2. Place biscuits into a snap lock bag and seal. Using a rolling pin, crush biscuits. 3. Place butter in a pan over medium-low heat, when melted, add biscuits and toast for about 2-3 minutes. Transfer to a clean bowl to cool. 4. In a large bowl, place cream cheese and cream and stir. Add sugar and lemon rind and continue to stir until mixture is smooth. 5. Assemble each by first adding the biscuit crumble, lemon rind and cream cheese. Garnish with chocolates.
