Blueberry Cream Cheese Muffins are a delicious breakfast treat! Recipe: Start your batter by mixing the dry ingredients. 1 ¾ cups plain flour (all-purpose) 1 T. corn starch 2 t. baking powder ½ t. salt Then add the following to the batter… ¼ c oil (we used vegetable oil) 4 T. butter 1 cup sugar 1 egg plus 1 egg white ½ cup buttermilk 1 ½ t. vanilla flavoring Add 1½ cups blueberries to the batter last and set aside. Now make a filling… 8 oz. soft cream cheese 1/3 cup sugar ½ t. vanilla flavoring Fill greased/sprayed muffin tins 1/2 to 2/3 full of the batter. Make a hole in the center of the batter and spoon in a teaspoon of the filling. Then cover the “hidden” filling with a little more batter. Make a streusel topping ¼ flour and ¼ brown sugar and 1/8 t. salt. Mix well and sprinkle on the top of each muffin. Bake at 375 for 25 minutes! Makes 12 very large or 16 small. P.S.
