In this video, I’ll show you how to make a simple and delicious Cucumber, Carrot, and Wood Ear Mushroom Stir-Fried Eggs. This dish is colorful, nutritious, and very easy to cook. The combination of fresh cucumber, crunchy wood ear mushrooms, sweet carrots, and soft eggs makes it incredibly tasty. Perfect for a quick and healthy home-cooked meal! Ingredients: Cucumber Carrot Wood ear mushrooms 3 eggs Garlic Salt Soy sauce Cornstarch Cooking oil Water Instructions: 1.Peel the cucumber and cut it into sections. 2.Cut the carrot into diamond-shaped slices. 3.Crack 3 eggs into a bowl, add a little salt, and beat well. 4.Soak the dried wood ear mushrooms in warm water until softened. 5.Blanch the carrots and wood ear mushrooms in boiling water. 6.Add 3 tablespoons of oil to a pan and cook the eggs first. Do not overcook them—about 80–90% done is perfect. Remove and set aside. 7.In the same pan, sauté minced garlic until fragrant. 8.Add the cucumber and stir-fry for about 1 minute. 9.Add the wood ear mushrooms and carrots, then stir-fry for another minute. 10.Return the cooked eggs to the pan and mix everything together. 11.Season with a little salt. 12.Finally, add a simple slurry (1 tablespoon cornstarch, 80 ml water, a pinch of salt, and 1 teaspoon soy sauce) and stir until the sauce thickens.
