Dates are naturally rich and sweet, but instead of making a heavy cake, this recipe transforms them into a smooth date paste that creates an incredibly soft and moist sponge. Then toasted walnuts are folded into the batter to add gentle crunch and depth of flavour. But the real magic happens in the layers. A light whipped date cream brings a delicate caramel like sweetness without being overly sugary, while a smooth butterscotch finish adds that final touch of warmth and luxury. The result is soft. Nutty. Lightly caramel flavoured. A balanced cake where every layer complements the next. Not overly sweet. Not dense. Just a beautifully layered date cake with texture and elegance in every slice. Full ingredient list and measurements below. 🧾 INGREDIENTS 🔹 Date Walnut Cake ● 200g soft pitted dates ● 180ml hot water (for soaking) ● ½ tsp baking soda ● 120g all purpose flour ● 1 tsp baking powder ● ¼ tsp salt ● ½ tsp cinnamon ● 115g unsalted melted butter ● 85g brown sugar ● 2 eggs ● 1 tsp vanilla extract ● 80g toasted walnuts 🔹 Whipped Date Cream ● 180g soft pitted dates ● 6 Tbsp hot water ● 240ml whipping cream ● 1 tsp vanilla extract ● 1 tsp powdered gelatin 🔹 Butterscotch Sauce ● 57g butter ● 75g brown sugar ● 145ml whipping cream ● pinch of salt ● 1 tsp vanilla ● ½ tsp gelatin 👩🏽🍳 KEY TIPS FOR SUCCESS ● Always preheat your oven for atleast 7 - 10 minutes. ● Soak the dates in hot water until very soft before blending. This helps create a smooth paste and prevents lumps in the batter. ● Toast the walnuts lightly before adding them to the cake. This enhances their flavour and keeps them crunchy inside the soft sponge. ● Do not overmix once the flour is added. Overmixing can make the cake dense instead of soft. ● Allow the cake to cool completely before assembling the layers. ● Chill the whipped date cream briefly before layering. This helps it hold its shape inside the ring mold. ● Pour the butterscotch sauce only when slightly cooled and thickened. Hot sauce can melt the cream layers. ● Chill the assembled cake before slicing for clean, defined layers.
