EP05. Based on request, this time, I will make Ama-zake, a Japanese super drink known as "Drinking intravenous drip" with Science. [Materials] Rice 1 cup (150 g) Dried Koji mold (200 g) Water 150 ml [HOW TO MAKE] In a rice cooker, cook 1 cup of rice. This time, use glutinous rice, called Mochi-gome. Add 150ml of water to cool down and make mixing the koji mold into cooked rice easier. [Science Information] For AMA-ZAKE, I used dried mold. Koji mold is a type of mold that is safe to eat. Koji yellow mold is a Japanese national fungus used in sake, miso, and soy sauce. Its scientific name is Aspergillus oryzae. In this case, I will use dried koji. The temperature at which koji saccharification is most advanced is 60°C. The enzyme amylase of koji mold saccharifies the starch in the rice. Koji mold itself is killed at around 50°C. Therefore, heating at 60°C kills the fungi, but the enzymes remain, and this group of enzymes breaks down starch and protein to produce glucose and amino acids. [Ingredients in AMA-ZAKE] Glucose: Activates the brain Essential amino acids: Maintains physical condition Vitamin Bs: activate metabolism, improves fatigue and stress Oligosaccharide: feeds good bacteria and regulates the intestinal environment. Acid protease: Recent studies have hypothesized that acid proteases produced by koji mold break down indigestible proteins, resulting in an increase in bifidobacteria. It is speculated that the mechanism of action of acid proteases produced by rice yeast is completely different from that of oligosaccharides, which are well known as prebiotics (a source of nutrition for beneficial bacteria in the large intestine). [Best if drank by this date] When the fermentation process is complete, the vegetable lactic acid bacteria will cause a sour taste, so drink before that time. The shelf life is said to be one week in the refrigerator or three months when frozen. AMAZAKE contains the above nutrients in good balance. It is also called "drinkable intravenous drip" because the nutrients are similar to those in an intravenous drip. [Expected effects are as follows??] Suppression of elevated blood pressure Suppression of cholesterol level Anti-obesity effect Suppression of amnesia Prevention of summer fatigue Prevention of aging -Increase hair shine Thank you for watching.
