Under her leadership, Lady Bee earned the Michter’s Art of Hospitality Award 2025 (becoming the first Peruvian bar to receive it) and rose to #16 on The World’s 50 Best Bars list. Gabriela’s culinary training and commitment to local ecosystems drive a philosophy where each cocktail and dish tells a story of place, seasonality, and respect for nature. Ruben Neideck – Head Bartender of Velvet, Berlin Ruben Neideck is Head Bartender at Velvet Berlin, a leading pioneer in hyper-seasonal cocktail artistry. His accolades include Bartender of the Year (DE/AT/CH) and a reputation for transforming locally foraged botanicals into compelling, time-and-place cocktails. At Velvet, Ruben leads their lab-driven approach: the menu evolves weekly based on nature’s rhythms, spotlighting innovation, sustainability and sensory storytelling. Evan Stroeve – Founder of The Waratah, Sydney Evan Stroeve is an award-winning Australian bartender and bar owner, currently behind the upcoming The Waratah in Sydney and known from Re Bar, where he helped pioneer regenerative, low-waste cocktail concepts. He was crowned Australian World Class Bartender of the Year 2021, and has consistently placed among the top competitors globally. Evan’s philosophy is rooted in sustainability: he strives for zero waste, composts unused ingredients, sources locally, and designs bars with ecomaterials, believing that every cocktail should tell a story about place, seasonality, and responsibility. Emmanuele Balestra – Bar Director of Le Majestic, Cannes Emanuele Balestra is the Bars Director at Hôtel Barrière Le Majestic Cannes, and a botanical alchemist in the world of mixology.
