These 2 dishes can be served together BROWN RICE PULAO (Serves 6-8) by Palak Jain Ingredients 2 cups whole brown rice, rinsed and soaked in 4 cups of water for 6-8 hours 5 cloves 5 black peppercorns 2 cardamom pods 3 bay leaves 1 long cinnamon stick ½ tsp (about 20 strands) saffron 1 tsp unrefined salt (or to taste) 2 cups water ½ cup steamed cubed carrots (with skin on) ½ cup steamed peas ½ cup steamed chopped string beans 2 tbsp chopped fresh coriander leaves, for the garnish ¼ cup lemon slices, for the garnish Method In a pan, dry roast cloves, cardamom, cinnamon, bay leaves and black pepper for a minute until fragrant. Keep aside. Drain the water from the soaked rice. In a pan, mix the saffron threads and salt in 2 cups of water. Add the soaked rice and the roasted dry spices to the pan and cover. Cook rice on medium heat until the rice is fluffy. You may have to add extra water, until all the rice is cooked. Add steamed mixed vegetables and mix well. Garnish with fresh green coriander leaves and lemon slices. Peanut Yoghurt https://sharan-india.org/recipes/pean... SPINACH CARROT RAITA (Serves 2) by Prema Denduluri Ingredients 1 cup Peanut curd (yogurt) or any other unsweetened store bought plant-based yogurt ½ cup blanched spinach ½ cup raw grated carrots 1 small green chilli cut into small pieces (optional) Pink salt to taste 1 tsp roasted cumin powder 1 tbsp chopped coriander leaves for garnishing Method Mix all the ingredients in a bowl except the finely chopped coriander leaves. Garnish with the coriander leaves.
