Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women The cake is moist with a rich coffee flavour, plus the mascarpone makes the frosting. This is a really deep luxurious coffee cake, very impressive and delicious. INGREDIENTS: All purpose flour 1 ¼ cup Caster sugar ½ cup Cocoa powder 1 tsp Baking powder ½ tsp Salt ¼ tsp Baking soda 1 pinch Coffee powder 1 tsp Hot water ¼ cup Vanilla essence ½ tsp Egg 3 nos Oil 35-40 ml Icing sugar 1 tsp METHOD: 1. Take a bowl, add all purpose flour, caster sugar, cocoa powder, baking powder, little salt, baking soda and mix nicely and keep aside. 2. Separate egg whites and yolk in two separate bowls. 3. In a small bowl, add instant coffee powder, little hot water and mix it. 4. To it add vanilla essence, mix it and add this mixture to egg yolk bowl. 5. To it add oil mix it and keep aside. 6. In a bowl add egg white, icing sugar and whisk until we get nice peaks. 7. Take all purpose flour mixture bowl, add coffee mixture, egg white mixture and mix slowly with spathula. 8. Pour this mixture into clean and dusted cake mould, later place in oven. 9. Bake at 180 degree for 20 to 25 mins and rest it for some time, later demould and cut into pieces. 10. Now cappuccino cake is ready to serve.
