Brinjals are stuffed with green masala and served. This is a very popular preparation in Maharashtrian homes! KHARI VANGI Ingredients 4-5 medium brinjals (vangi/baingan), with the stems Stuffing 8-10 garlic cloves 2 green chillies ¼ cup raw peanuts 1 cup fresh coriander leaves 50 grams dried coconut, roughly chopped Masala 3-4 tbsps oil 1½ tsps mustard seeds Salt to taste Method 1. To make the stuffing, place garlic cloves on a stone grinder and coarsely crush it. Add peanuts and continue to crush it. 2. Add coriander leaves and crush till a coarse mixture is formed. Drizzle a little water and continue to crush. 3. Add dried coconut and continue to crush till a coarse mixture is formed. Transfer into a bowl. 4. Make vertical crisscross cuts on the brinjal without cutting it through to make a cavity. Stuff it with a generous portion of the stuffing. Reserve the stuffing that remains. 5. To make the masala, heat oil in a kadai. Add mustard seeds and let them splutter. Add the stuffed brinjals and cook on medium heat for 3-4 minutes. 6. Add 1 cup water and mix well. 7. Add salt and mix. Reduce the heat to low, cover the kadai and continue to cook till the brinjals are cooked completely. 8. Switch the heat off and serve hot.
