For the cake: 1/2 cup shortening 1 1/2 cup sugar 2 cups flour, sifted before measuring 2 eggs, well beaten 1/2 tsp baking powder 1/2 tsp salt 3/4 tsp baking soda 1/4 cup buttermilk 1 cup mashed bananas (2-3 ripe bananas) 1 tsp vanilla For the frosting: 1 pint heavy whipping cream 1/4 cup sugar (or more if you prefer a sweeter whipped cream) 1 tsp vanilla Cream shortening and sugar. Add well beaten eggs and mix. Sift flour once before measuring. Sift flour, baking powder, baking soda and salt together and add to the mix, alternating with the mashed bananas and buttermilk. Add vanilla and mix. Pour mix evenly into two greased cake pans. Bake at 350° for 30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool a bit before removing from pans. Let cool further before frosting. Pour the whipping cream into a bowl and beat with an electric mixer until it starts to firm up. Add the sugar and vanilla and continue to beat until it's thick enough to hold up as a frosting. Frost the bottom layer of the cake with the whipped cream. Add a layer of sliced bananas. Add the to layer of the cake and frost with whipped cream. If you like, you may add sliced bananas to the top layer. Store in the refrigerator. This cake is very similar to the taste of banana bread. The whipped cream frosting gives it an extra special taste. Enjoy!
