Welcome to my favorite room in my house, The Kitchen! This chili has been a Super Bowl Sunday tradition at my folks’ house for years. Every year I tweak it just a little… and this time, I finally got it just right. Rich, cozy, full of flavor—and even better the next day—this chili is all about layering spices, taking your time, and letting everything come together the way it’s supposed to. I’ll show you how I make it, plus how easy it is to customize (beans or no beans, your call!). This is comfort food, made with love, meant to be shared—especially on game day. Ingredients Base 2–3 Tbsp bacon fat (any oil works) 1 onion, chopped 1½ bell peppers (orange & red), chopped Sauté for 5–10 minutes until soft. Season lightly with salt & pepper. Meat 1½ lbs ground beef ¾ package chorizo Cook until fully browned. Season again with salt & pepper. Garlic & Spices 3–4 cloves garlic, minced 2 Tbsp chili powder 1 tsp paprika 1 tsp ground black pepper 1 Tbsp dried oregano 2 tsp ground cumin ½ Tbsp additional pepper (since you’ve been seasoning as you go; otherwise use 1 Tbsp) 1 Tbsp Dutch-process cocoa powder 2 Tbsp Worcestershire sauce Cook 10–20 minutes, stirring often, to let the spices bloom with the meat. Tomato Base 1 (6 oz) can tomato paste – sauté for 10 minutes 1 (15 oz) can fire-roasted diced tomatoes 2 cups beef broth Simmer for 30–45 minutes. Remove from heat, add 1 jalapeño, sliced open, let cool, then refrigerate overnight so the flavors can fully marry. Next Morning Discard the sliced jalapeno 1 can black beans 2 cans kidney beans (or any bean combo you like—no beans? Skip them. Want more? Add another can!) Simmer on low heat all day, stirring occasionally so it doesn’t burn. Alternatively, place in the oven at 200–250°F until ready to serve. Topping Suggestions Sour cream Shredded cheese Chopped onions Avocado Cilantro Sliced jalapeños Limes Corn chips Fresh baked cornbread + a big bowl of this chili = perfection.
