We are finally baking through all of my wedding cakes! Starting with this Malted Coconut Cake, which was the first recipe I developed for my wedding cakes, and a total labor of love. But absolutely worth it. Today we are baking through the crunchy coconut filling, the mango yuzu curd (in curd we trust), tender coconut cake layers and finally ending with making a cream cheese frosting and how to best assemble the cake.
