Monia Temaurioraa likes to creatively substitute imported products with local ingredients. When the wet season begins and the breadfruit ripens, it's time to make tabbouleh – 100% local of course. As a mother she’s passing on her culinary heritage to her 12-year-old son, who’s a dab hand at making coconut milk. Marc Cizeron is originally from Nice. He lives and cooks in his little paradise right by the sea, where he dives for edible algae and tends to the corals. Like Monia, he believes that the best medicine is a healthy diet. On Sundays, Monia and Marc light the ahima'a – the traditional Tahitian earth oven – to prepare a chicken fafa.
