These homemade chickpea mini breads are a gluten-free, protein-packed alternative to traditional bread, offering a soft texture and delicious flavor that even kids will love. Made primarily with chickpeas, which are rich in protein and essential nutrients, these breads are a healthy option for school lunches or anytime you need a quick, nutritious meal. The subtle addition of cumin seeds not only enhances the flavor but also helps prevent any digestive discomfort often associated with chickpeas. Instructions: Start by soaking raw chickpeas in room-temperature water overnight, preferably in the fridge. The next day, the chickpeas should double in volume, rinse them thoroughly under running water and strain them well. Transfer the rinsed chickpeas into a mixing bowl and add half of the water. Blend the chickpeas using a hand blender or food processor. Add the remaining water and continue blending until you get a smooth consistency. Add olive oil, salt, and baking powder to the chickpea mixture. Stir just enough to combine all the ingredients evenly. Prepare small baking ramekins by brushing each one with oil and lining with parchment paper. Pour the chickpea mixture into the prepared ramekins, dividing it equally among them. Gently shake the ramekins to flatten the surface of the batter. If desired, sprinkle some cumin seeds (or seeds/spices of your choice) over the top of each bun. Preheat the oven to 350°F (175°C). Place the ramekins in the preheated oven and bake for 35 minutes, or until the buns are light golden and cooked through. Once baked, remove the buns from the oven and let them cool down before serving.
