🔊🎶🗣️ In all my #culinary #travel, somehow I’ve never seen the #olive oil making process firsthand—not even a mechanized one. That changed when our manufacturing tour of #Mallorca continued at Finca @Treurer, where we arrived just as a forklift was dumping a whole new batch of #olives into the mill. Olives get a human spot-check before going up the conveyors to be washed and grinded into a pulp, and then the pulp is cold pressed for the oil to be extracted. It’s then strained and used for cosmetics or, most significantly, stored in stainless steel tanks before being bottled for culinary purposes. At Treurer, extra virgin #oliveoil is bottled on demand so product is the freshest it can be with minimal oxidation. #evoo! But observing the olive oil production is only a part of the experience since this farm of olive groves has pivoted to #agritourism, with a stylish boutique hotel and a restaurant under the helm of award-winning Chef José Cortés. Lunch included a showcase of local products, including their olives and olive oil: beef cheeks braised in red wine, on a bed of chickpea purée; aubergines with ramallet tomatoes; coca (flatbread) with carob (very common in Mallorca), with roasted red peppers, dill, and lampoga fish (aka dorado, mahi-mahi); #ensaimada with sweet potato purée, pulled roasted #pork, and fig; ensaladillas with prawn tartare and olive oil “caviar”; croquetas with butifarrón and mushrooms; and for dessert, almond flour cake with figs and berries, plus a sauce of chocolate almond milk; and almond cookies with chocolate-covered oranges. — Olive oiling and more, in #Algaida, #Mallorca, #Spain / #España. 🇪🇸 #theglobaltripspain #theglobaltripmallorca #theglobaltripfood
