Make this rich and flavorful restaurant-style smoky chicken masala at home with real charcoal smoke. This recipe uses simple ingredients but gives a perfect dhaba-style smoky flavor using the authentic dhungar method. Ingredients: 12 chicken leg pieces Salt, turmeric, and lemon juice (for marination – 5–15 mins) 15 small pieces ginger 15 small pieces garlic 10 dried red chilies 1 tsp black pepper 3 medium onions (chopped) 3 medium tomatoes (chopped) 3 bay leaves 5–6 cloves (for frying chicken) Whole spices: 5–6 cardamom, 3–4 cinnamon sticks, 6–7 cloves, pepper, bay leaf 6–7 tbsp refined oil 1½ tsp coriander powder ½ tsp cumin powder 1 tsp Kashmiri red chili powder 1 tsp sugar Salt to taste Warm water as needed 3 tsp kasuri methi (roasted and crushed) 2 tbsp fresh cream Small piece charcoal + 1 tsp ghee (for smoke) Method: Marinate chicken with salt, turmeric, and lemon juice for 5–15 minutes. Make a smooth paste using ginger, garlic, dried red chilies, and black pepper. Fry chicken in refined oil with a few cloves until lightly golden. Remove and keep aside. In the same oil, add whole spices and sauté chopped onions. Add the prepared paste and salt, cook well. Add chopped tomatoes, sugar, coriander powder, cumin powder, and Kashmiri chili powder. Cook until oil separates. Add fried chicken and cook with warm water until chicken is tender and gravy thick. Add roasted crushed kasuri methi and fresh cream. Mix well. For smoky flavor, heat charcoal until red hot. Place in a small bowl, add ghee, and keep it inside the curry. Cover immediately for 7–8 minutes. Finish with extra kasuri methi and cream. This gives a strong restaurant-style smoky aroma and rich creamy texture. Serve hot with naan, roti, paratha, or rice.
