Ready in 40 minutes | Serves 2–3 | Perfect for Lunch or Dinner If you love aromatic, wholesome meals, this Vegetable Pulao is your go-to dish! Loaded with colorful veggies, fragrant spices, and soft basmati rice, it’s a simple recipe that bursts with flavor and nutrition. 🥘 Ingredients • Refined Oil (Sunflower) – 100–150 ml • Whole Garam Masala – 4–5 pieces each of clove, cinnamon, and cardamom • Cumin Seeds (Jeera) – 1 tsp • Vegetables (chopped) – Onion, Tomato, Beans, Carrot, Cauliflower, and 5 Green Chilies • Ginger Paste – 1 tsp • Garlic Paste – 1 tsp • Soya Chunks – A handful (soaked and squeezed) • Curd (Yogurt) – 100 ml • Basmati Rice – 150 g (washed and soaked for 15 minutes) • Lemon Juice – From ½ lemon • Ghee (Clarified Butter) – 1 tsp • Salt – To taste 🔥 Cooking Instructions 1. Heat oil in a thick-bottomed pan. 2. Add whole garam masala and jeera; let them splutter for a few seconds until aromatic. 3. Add onions and sauté until golden brown. 4. Mix in tomatoes, ginger-garlic paste, and green chilies. Cook for 3–4 minutes. 5. Add chopped veggies and soya chunks. Stir-fry for about 10–12 minutes on medium heat. 6. Mix in curd and cook another 5 minutes until the mixture is well blended. 7. Add rice and salt. Stir gently for 5 minutes. 8. Squeeze lemon juice, mix, then pour just enough water to cover the rice (about 1½ cups). 9. Cover and steam on a low flame for 15 minutes until rice is perfectly cooked. 10. Finish with a drizzle of ghee and fluff the rice gently. 🌼 Pro Tips for Perfect Pulao • Use aged basmati rice for that signature grain separation. • Soak soya chunks in hot water for 10 minutes to soften. • Add mint or coriander leaves at the end for a fresh twist. • Serve with raita or papad for a complete meal.
