To another bowl, add three tbsp of moong dal and soak it for two hours. To a mixer jar add the soaked chillies along with the dal, add a piece of chopped ginger and grind it in pulse mode. Transfer it to a bowl and keep it aside. To a tempering pan, add three tbsp of ghee, add one tsp of mustard seeds, once mustard seeds starts spluttering, add one tsp of asafoetida powder To this add half cup of freshly grated coconut and saute it for two minutes. Add the tempered ingredients to the ground batter. Add the soaked moong dal after straining the water, add chopped curry leaves, one tsp of salt and mix it all well. To a kadai, add enough oil for deep frying and heat it. Once the oil is hot we can start frying the vada’s. Dap a little water in the leaf, take a small portion of the vada batter, place it on the leaf and shape it evenly. Then gently drop the vadas in the hot oil. Let it cook on all the sides. Once it comes to a golden brown colour remove it from the oil and place it on the tissue towel.
