Ingredients: 200g spruce tips 200g sugar 2 limes 250g active ginger bug 2L water How to: 1. Add the spruce tips, sugar, water, lime juice and lime zest to a pot. Bring to a boil and let simmer for 15 minutes. 2. Strain into a large bowl and press out the remaining liquid. Let this come to room temperature. 3. Mix in the ginger bug 4. Pour into cleaned and sanitized pop or brewing bottles using a funnel and seal them. 5. Let them sit at room temperature for 1-7 days, coming back daily to "burp" the bottles. This allows the pressure to be released and for you to check on the level of carbonation. Once they are active and bubbly, store in the fridge until you are ready to enjoy. Serve over ice or as is.
