Put milk, two egg yolks, dry yeast, and sugar in a bowl, mix well. Then add high-gluten flour and salt, mix until a dough forms, seal and refrigerate for about two hours. ② Take out the chilled dough, knead in the butter, continue kneading for about 6-8 minutes. During the kneading process, you can slap the dough to speed up the process. Then put it in a bowl to ferment until it doubles in size. ③Take out the fermented dough, divide it into eight equal parts, knead them into rounds, place them on parchment paper, press the dough flat, and let it relax and ferment in a warm place for about 40 minutes. ④ Heat the oil to 165°C/329℉, put in the fermented dough, fry each side for about 1 minute. Coat the doughnuts with powdered sugar and cinnamon sugar. Mix cinnamon powder and sugar according to your preference for the cinnamon sugar. ⑤ Make the chocolate ganache by microwaving the dark chocolate and whipping cream, not exceeding 60°C/140℉.
