You are going to love making dinner roll kits because it will mean that your family or friends benefit from homemade dinner rolls more often. Each of the labels that you’ll see in the video have these instructions: Dinner Rolls makes 18 Add these ingredients to the bread machine first: 1 1/4 cup warm water 1 egg, well beaten 2-3 tablespoons shortening or vegetable oil Add contents of the jar to bread machine. Jar contains: 4 cups sifted all purpose flour 2 tablespoons sugar 1 1/2 teaspoons salt 1 1/2 tablespoons powdered milk 1 tablespoon active-dry yeast 1. Set bread machine on dough setting and let knead and rise in machine. 2. When machine is done, remove dough from machine and shape into 18 dinner rolls. 3. Place roll slightly apart on a well-greased cooking sheet. cover and let rise until double bulk again, about 30 minutes. 4. While rising, preheat oven to 400° (high altitude 425°). 5. Place cookie sheet on top rack of oven and bake for 8-10 minutes, or until they begin to turn golden, but still have some white on them. Do not overcook or they will be dry. BY HAND: If you don't own a bread machine, here are instructions for doing it by hand -- which I did for probably 5 years. 1. In a large bowl, combine the water, oil/shortening, and the beaten egg. 2. Add contents of dinner kit to the large bowl wet ingredients. 3. Beat vigorously with a wooden spoon. 4. Knead on a lightly floured surface 8 to 10 minutes. Cover and let rise in a warm place until double in bulk, about 45 to 60 minutes. (High-altitude rises much faster; watch carefully to not let overrise.) 5. Turn dough out of bowl and shape. (NOTE: Keep dough as sticky as possible to work with.) Roll on a lightly floured board. To shape rolls Parkerhouse style, roll them out to 1/2 inch thick. Cut with a round cookie cuter. Pull each round piece of dough to sa slightly oval shape, then fold over and crease. 6. Place rolls slightly apart on a well-greased cookie sheet. Let rise until double in bulk again, about 30 minutes. 7. While rising, preheat oven to 400° (high altitude 425°). 8. Place cookie sheet on top rack of oven and bake for 8-10 minutes, or until they begin to turn golden, but still have some white on them. Do not overcook or they will be dry. In a STAND MIXER- like KitchenAid or Bosch: 1. Dump wet ingredients into stand mixer and very slowly add the dry ingredients. 2. After a few minutes on low speed, you can speed it up to medium speed and let machine knead it for about 5 more minutes. 3. Cover and let rise in a warm place until double in bulk, about 45 to 60 minutes. (High-altitude rises much faster; watch carefully to not let overrise.) 4. Turn dough out of bowl and shape. (NOTE: Keep dough as sticky as possible to work with.) Roll on a lightly floured board. To shape rolls Parkerhouse style, roll them out to 1/2 inch thick. Cut with a round cookie cuter. While salt can inhibit yeast growth, there is no growth happening while they are in dry form.
