Ingredients: 16.25 ounces white cake mix (I substitute butter for oil, cream for water and add a pinch of vanilla to make the cake taste homemade). 8 ounces Espresso Coffee 14 ounces sweetened condensed milk 2 tbsp Kahlua coffee liqueur Topping: (you can opt to skip, or use store bought frosting) 8 ounces heavy whipping cream 8 ounces mascarpone cheese, room temperature ¼ cup granulated sugar 1 tsp vanilla Cake Decoration: 4 ounces unsweetened chocolate for shavings 4 ounces of cocoa powder Instructions: In a large mixing bowl, combine the cake ingredients and beat with an electric mixer on medium speed for 2 minutes. Pour the batter into a greased baking pan and bake at 200°F (93°C) for 40 minutes, or until a toothpick inserted in the center comes out clean. While the cake is baking, whisk together the espresso, sweetened condensed milk, and Kahlúa in a medium bowl. Once the cake is out of the oven, immediately poke holes all over the top using the handle of a wooden spoon. Whisk the coffee mixture again, then pour it evenly over the cake, using a pitcher with a spout for easier pouring. Refrigerate the cake until completely cooled, about 30–60 minutes. In a mixing bowl, beat the whipping cream on medium speed with an electric mixer. Gradually add the sugar and vanilla, beating until stiff peaks form. Fold in the mascarpone cheese until fully combined. Spread the frosting evenly over the chilled cake.
