#SheerKhurma#EidSpecialSweetsRecipe Sheer Khurma is a rich dessert made of milk, fine vermicelli, lots of nuts, ghee and dates. Sheer Khurma's persian term meaning “milk and dates”. It is traditional festive delight and is made during Eid-ul-Fitr or Eid-al-Adha. This delicious dessert is excellent to make during winter as it has lot of dry fruits, which give heat and warmth to the body. Sheer Khurma is originated in Afghanistan and is a popular version evolved in Hyderabad , India. Its also called as Mughalai dessert. Ingredients : Almonds (soaked overnight) - 20 Cashew -15 Raisins -1 tbsp Dates – 5 to 6 Pistachios -10 to 12 Unsweetened khoya – 2 tbsp Condensed milk – 120 ml Poppy seeds - 2 tbsp Pumpkin seeds – 2 tbsp Cardamom powder – 1 tsp Ghee – 4 tbsp Seviyan – 50 gms Milk – 1 liter Kewda water ( optional)– 1 tsp Saffron (optional) How to cook Sheer Khurma : 1. Heat a heavy bottom vessel and add milk . Let the milk come to boil . It takes 10 minutes. Lower the flame and keep stirring the milk at intervals to avoid burning of milk. 2. Meantime chop all the dry fruits . 3. Heat pan add ghee and sauté the chopped dry fruits for 3 to 4 minutes until crisp and lightly golden. 4. Remove from pan and keep them aside. 5. To the same pan add pumpkin seeds and seviyan and fry them with ghee on medium flame until golden. 6. Remove from pan and keep aside. 7. Now we will add half of the fried nuts and other half keep aside for garnishing 8. Then add seviyan and pumpkin seeds and stir well and cook. 9. Simmer until the vermicelli is soft and cooked. Keep stirring to avoid burning of milk. 10. Time to add cardamom powder, condensed milk and khoya. At last add Kewda water and close the lid and cook for 5 minutes on low flame. 11. Then turn off the stove. By simmering the Sheer Khurma will thicken up. Garnish with remaining dry fruits. Serve it warm or chilled Note : Be careful as the fine seviyan tend to burn faster. Condensed milk can be substituted to sugar, 1 liter of milk add 1 cup of sugar.
