American is star of the show! Pimento cheese is conquering England!

Jane Davis, a Savannah native based in Leamington Spa, is on a mission to change the way y’all cheese. As an American Briton, she was shocked (read: devastated) to find no pimento cheese here. Seven years ago, craving a taste of home, Jane waltzed into her local pub with a fresh batch and told the chef to cover her burger in the good stuff. It’s been on the menu ever since… and there, Homewrecker was born. Pimento cheese has been warming hearts in the southern USA for decades, so Jane became determined to make the unfamiliar familiar and convert y’all Brits from strangers to lovers of this southern classic. “So buckle up y’all and come along for the ride; this Southern gal is about to shake up the way y’all cheese and show you how it’s done where she comes from.” Says Jane Serves: 4-6 2 chicken breasts 200-250g fresh tagliatelle 50g butter 30g flour 400g single cream 50g sherry 1 tablespoon garlic granules 5 good-sized mushrooms 4 spring onions 50g piquante peppers 2 tablespoons Homewrecker cheese Optional: Grated Grana Padano or Parmesan for topping Method Preheat the oven to 180°C (350°F). Marinate the chicken breasts with truffle oil (or your preferred oil), sea salt, and cracked black pepper. Bake the chicken for 30 minutes. Once cooked, set aside to cool, then dice the chicken. Note: Leftover roast chicken can also be used. Grease a 9 x 13-inch casserole dish with a bit of melted butter and set aside. Following the time indicated on the packaging, Boil the tagliatelle (or spaghetti) in salted boiling water with oil. Once cooked, drain the pasta and place it in the buttered casserole dish. Set aside. Chop the mushrooms and spring onions. Sauté them in a pan with butter until soft. Remove from heat and mix in the piquante peppers and Homewrecker cheese. Add the diced chicken to the vegetable mixture and mix well. Melt the butter in a saucepan. Once melted, whisk in the flour until well mixed but not brown. Whisk in the sherry, then slowly add the cream while whisking continuously. Once the sauce thickens, mix in the garlic granules. Add the chicken and vegetable mixture to the sauce and mix well. Pour the sauce mixture over the pasta in the casserole dish. Top with grated Grana Padano or Parmesan if desired. Bake for 20-25 minutes or until the top is golden brown.
