More information about this week's cheese below: Country - Tennessee, United States Milk Type - Cow Pasteurization - Pasteurized Rennet Type - Animal Age - 3 Weeks This blue cheese is made at Sequatchie Cove Creamery, located outside of Chattanooga, Tennessee, and is known to be an ode to all things Southern! The cheese is made with pasteurized cow milk is wrapped in local fig leaves that have been soaked in Chattanooga Whiskey! Are you kidding me?? The cheese tastes sweet and salty, with a slight root beer flavor and undertones of bacon and dark chocolate. Pairing Suggestions: The bacony, root beer, chocolatey flavors in this cheese just beg to be paired up with those flavors!! Try it with dark chocolate, bacon, and Tennessee Whiskey like the leaves have been soaked in. We went with a honey whiskey because honey always pairs well with blue cheese! If You Can’t Find This Cheese: There are other blue cheeses that have been wrapped in leaves you should try to find, or track down another cheese by Sequatchie Cove!!
