Eggplant Casserole, Lunch & Cleaning

AyseandRambosDailyLife starts with a little time with my dog, Rambo. He is just relaxing today. Then I'll make a nice sandwich for lunch on crusty toasted bread with lettuce, tomato, sharp cheddar cheese, ham, beef bologna, and buffalo chicken. One for my husband and one for my son's lunch. Next, I'll spend some time cleaning the laundry room. It is a chore but has to be done. After that, I'll start dinner. Today's main course is an eggplant casserole with meatballs and potatoes. It;s one of our extended families' favorite dishes and one you should try to. Simple to prepare and just needs a dollop of Greek yogurt and a mixed salad and you have a delicious filling meal.
