Nearly every commercial kitchen is required to have a grease trap, but what is a grease trap and how does it work? Well, a grease trap, also called a grease interceptor, is a plumbing device that captures and intercepts fats, oils, and grease, also called FOGs, from wastewater. The point of a grease trap is to avoid FOG buildup in sewer pipes, which can lead to blockages and overflows. So, how does it manage to capture FOGs? Grease traps are constructed with a series of walls called baffles that slow the flow of wastewater, allowing FOGs to rise to the surface. The baffles then retain FOGs on the surface, allowing the rest of the wastewater to flow through a drain and into the sewers. If a grease trap isn’t properly maintained, FOGs can solidify into a heavy mass that will eventually block or clog the drain and cause slow drainage. I hope this video helped teach you something new!
