Mike attempts to recreate the American Amber Ale from the recently closed Cambridge Brewing Company in Cambridge, MA. This beer style was once a staple on craft brewery and brewpub beer lists, offering a deep malt character and rich red color—a stark contrast to the pale yellow beers dominating the late '90s and early 2000s. Cambridge Brewing Company had this Amber Ale on tap for 35 years! While many local fans will miss their legendary sours, Belgians, and IPAs (not to mention their Buffalo Fingers and flatbread pizza), this simple but deeply satisfying amber ale holds a special place in my heart. For this brew, I used the ingredients I had on hand, and while it's not a perfect match, it’s a solid starting point. The English ale yeast I chose was too under-attenuative, leaving the beer sweeter than intended. Next time, I'll switch up the yeast for better dryness and tweak the specialty malts.
