METHOD FOR PULAO Heat oil in a pan, add chopped onion, fry for 5 mins, add whole spices 1 tbsp, ginger garlic paste, yogurt, salt, grounded fennel seeds and fry well, add in chicken stock and chicken powder, cover and cook till boiling, add rice in this mixture with fried koftay, grounded nutmeg, mace, cover and cook till rice done, leave it on dum with whole green chilies, coriander leaves, mint leaves, lemon and tomato slices, serve with raita. ------------------------------------------- POTATO AND MINCE CHAPLI KABAB Ingredients Boiled mince ½ kg Boiled potatoes mashed 2 cups Chopped onion 1 cup Chopped tomato 1 cup Coriander leaves chopped 2 tbsp Green chilies chopped 4 Crushed coriander 1 tbsp Crushed cumin 1 tsp Ginger chopped 1 tbsp Pomegranate seeds crushed 1 tbsp Crushed red pepper 1 ½ tsp Corn flour 2 tbsp Eggs 2 Oil for frying Tomato slices for topping Bread 1 slice made into crumbs METHOD Boil mince, chopperize, boil potatoes, mash, add in 1 beaten egg, make scramble with 1 egg and add to the mince and potato mixture, add in all the seasonings in the mince and potato mixture, make in the shape of chapli kebab, top with tomato slice, shallow fry in hot oil, serve with salad and raita ------------------------------------------- PAPAY KI KHEER Ingredients Milk 1 liter Rice 3 tbsp soaked Papay 4 Sugar 4 tbsp heaped Cardamom powder ½ tsp Almonds, pistachios sliced for garnish Silver paper for garnish Rose water 2 tbsp METHOD In a blender put soaked rice, papay and blend with ½ cup water, boil milk, add in blended mixture of rice and papay, add cardamom powder and rose water, cook till kheer is becoming thick, add sugar, lastly remove in earthen clay pots, serve garnished with almonds, pistachio, silver paper, serve chilled.
