Vianocna klasika, zltkove rezy mojej mamy, ktore sa u mna doma pecu kazdy rok. Krajanie rezov je na nervy a nech sa snazim co sa snazim nikdy to nieje nakrajane tip top, ale myslim ze sa hambit tiez nemusim. Ide predsa o chut nie? Ak mas typ ako ich dokonale nakrajat, pridaj do komentu a podel sa o radu. Recept: 210g praskovy cukor, 210g nesolene zmaknute maslo a 210g pomlete vlasske orechy. Toto zmiesaj a pridaj vyslahany tuhy sneh z 5ks bielkov a 105g polohrubej muky. Sneh vmiesavaj do cesta zlahka. Daj to upiect na horkovzdusnom ohreve na 190 stupnoch cca 12minut. Medzitym si sprav zltkovu polevu. 5ks zltok a 225g praskoveho cukru vymiesaj na polevu. Po upeceni platu si sprav test spajdlikom, ak je suchy je to hotove. Na horuci plat vylej polevu a pekne ju rozotri. Pozor, roztieraj velmi rychlo, poleva zaschne skoro okamzite a uz s nou nepohnes! cca 2-3 minuty a musis to mat rozotrete! Rezy krajaj po vychladnuti zubkovym nozom, jemne, pomaly aby si co najmenej rozdrobil polevu. Skladuj rezy v papierovej krabici, nie v plastovej krabicke! Inak zvlhnu a mozes to vyhodit. Recipe: Mix 210g of icing sugar, 210g of softened unsalted butter and 210g of grounded walnuts together. Add 5pc fully whipped egg whites and slowly mix it in. Add 105g of flour, for uk use plain unless u can make a trip to polish or slovak shop and buy whats called polohruba muka in SVK or krupczatka in PL which is what im using here its a sort of coarser version of plain flour, uk dont have it, sorry. Bake at 190 degrees fan function for at about 12 mins. In a meanwhile, prepare a yolk icing. Mix 5 egg yolks with 225g of icing sugar and set aside. When u think its done baking, make a test with a toothpick. If it comes out dry, its ready. Pour your yolk mixture straight away on your hot sponge and spread it evenly. Work fast as it dryes really quickly. You got maybe 2-3 minutes and then u wont be able to spread it no more. Cut your cake with a bread knife and take your time. Slowly, so u have as little breakage as possible. Store your slices in a paper cake box, not plastic container, or it will go bad and you can chuck it in a bin.
